The Subi has a charming split personality: the front bar revels in sports-mad coverage while the cocktail bar attracts a CBD crowd seeking martini-fuelled solace from the office grind.
Always embracing new ideas through its decor and innovative cocktails, this place has matured through the decades with style and grace. The Subi mixes old-world charm from the early 1900s with contemporary features. A huge open fireplace and ornate rose detailing on high ceilings meet funky, low, cushioned chairs, shiny copper-topped tables and installations designed by florist Wayne Stubbs. The bar staff give the cocktail list the same treatment too, mixing classic martini combinations alongside fresh-flavoured originals such as the Red Bessie, created with Bombay Sapphire gin, raspberry liqueur, strawberries, passionfruit and lime. There's also an extensive list of premium wines to study and sip, and some 30 draught and bottled beers. While the cocktail bar is all about the elaborate drinks, the front bar specialises in sport-watching revelry. From the kitchen comes a creative array of light bites, such as the Subi Plate, which serves chilli baby squid with lime mayonnaise alongside tandoori salmon skewers, salt cod croquettes and other finger-food treats. Live jazz sounds float in from the adjoining restaurant on Wednesday and Saturday evenings, lending the place an even cooler vibe.
