Head chef Damien Heads and his team of hard-working culinary craftsmen are completely exposed as they whip up dishes from the series of woodfired delicacies promised by the menu. Coming off the grill are such dishes as coriander and fennel-spiced snapper with preserved lemon couscous; seared calves liver; or a one-kilo beef rib for two. Alternatively, there is an extensive selection of small dishes available throughout the day, from crispy whitebait to cured salmon with fennel and citrus.
