This Highgate hangout is an essential stop on any wine lover's itinerary. It serves up a cool and relaxed atmosphere and an impressive international wine list.
Set within Perth's hip dining district is this bar for the modern wine buff. The interior is minimalist and spacious, with high ceilings and steel fittings, yet warmth is retained by the extensive use of wood throughout. The separate bar and restaurant areas are divided by a ceiling-high wine rack which runs across the centre of the room.
As you'd expect, the emphasis here is on the drinks. An ever-changing wine list offers around 40 selections available by the glass, backed up by a master list of around 500 wines. The collection is comprehensive and carefully selected, with various regions and grapes represented - from Margaret River chardonnay through to Alsace pinot gris. Though the take on vino is very serious, the bar area itself is relaxed and inviting, with plenty of comfy seating in funky colours.
A peek on the other side of the wine rack reveals the dining area, coated in wooden furnishings and crisp white tablecloths. The menu is straight out of a French bistro: lamb, chicken and quail rotisseries, saucisson and cote de boeuf. Dishes are matched by the wine list and sommeliers are on hand to help with selections.
Must also holds regular wine appreciation events such as degustation dinners and presentations by winemakers.
