Establishment is an architectural stunner, reminiscent of decades past. Here, details of the former George Patterson House are preserved in today's modern-day drinking time. Five-metre cast iron pillars and intricate, pressed metal ceilings give it plenty of face-value charm, winning over both the drunk and the sober CBD office crowd in a blink.
Besides its alluring antique appeal, Establishment is also said to possess the longest bar in the CBD. Its 42-metre marble bar runs the length of the room, echoed by slender wooden tables. These communal drinking tables emphasise the aim of Establishment - to provide wound-up corporate types the chance to mingle, loosen their ties, and drink away their cares in collared company.
Thursday night entices a swarm of suits, with ladies scoring champagne to sip while soaking up the tunes. The wine and beer listings are long and thoughtful, so there is not much to want for at Establishment. The lunch menu has a pleasing mixture of Thai treats and Aussie pub-style dishes, all served with a dab of Establishment's signature style and flair.
The place is pretty damn hot. The building is beautiful, the cocktails were good, music was good. However the people there have a superficial, unattainable air about them. Go with friends because you probably won't make any there... haha. The crowd don't get any stars but the building, drinks, service and music all get lots of praise.
