Some years back, Geelong football star Cameron Ling sat down with a few mates and decided he wanted a bar where they could have a few drink with friends while looking out over the beach, so they gutted a 1960s factory and filled it with Edge Geelong. Now it may sound strange but, even with the bay views outside, the interior is what makes this place. Aiming to echo the feel of the Edgewater apartments upstairs, the designers have created a loft-style space, with clean, industrial lines softened by warm, wooden tables and comfortable, leather banquettes. This sleek yet relaxed environment is a perfect match for the drinking and dining offerings: top quality yet unfussy.
The wine list is essentially Australian (with a couple of NZ and French drops for good measure), with by-the-glass offerings in all of its grape varieties. Cocktails are generally classic, but the bartenders will also whip up something unique based on fresh, seasonal produce. Peckish punters can order a classic pub lunch or something from the grazing menu, such as the crumbed mushrooms with Cafe de Paris butter.
