A $2 million dollar revamp has left this historic hotel looking ever so swish, with a new outdoor terrace overlooking Crown Street, and a chic lounge bar.
The Dolphin Hotel is looking brand spanking new again, following a $2 million dollar designer fit-out. With gleaming aqua tiles and shiny metal finishes, this watering hole has undergone a flashy metamorphosis. However it has still managed to remain true to its pub heritage, even retaining some original fixtures like the antique open fireplaces.
Upstairs, the open-air terrace, complete with hanging wicker chairs, overlooks Crown Street, and is an ideal spot for happy hour drinks in the afternoon. The seating extends inside to the funky lounge bar, where you can sip a chilled strawberry caipiroska, or one of the many boutique beers available on tap. There is also an extended public bar with a two-storey projection screen for rowdy footy nights.
The new bistro is headed up by chef Colin Holt, who serves up dishes like salt and pepper squid and steak. Holt is also now reintroducing Surry Hills to the culinary delights of the classic prawn cocktail.
Since first opening its doors in the late 1850s, 'The Dolphin' has undergone many renovations, and changed hands nearly as many times. However, throughout it all, the hotel has held onto its name firmly - earning it a loyal and local following.
