Beaufort House's slogan of "step back into yesteryear" is particularly appropriate for its European-style Altar Wine Bar. The bar's showpiece is an 1850s hand-carved altar (hence the name) that originally sat in Adelong's Presbyterian Church, and rest of the room has been fitted out with complementary 19th-century antiques and ornaments.
The extensive wine list also has something of an old-fashioned approach. Australian wines, almost all of which are available by the glass, are at the bottom end of the scale, while the list of Old World drops all come in at the pricier end of things. For something a little different, choose from one of the many kinds of Schnapps on offer, all from the Thredbo Valley's Wild Brumby distillery. Flavours range from the more traditional butterscotch to a special blend known as the Devil's Tongue, made with Pink Lady apples, chilli and herbs.
